This is a superior red wine obtained from selected grapes rigorously gathered manually.
It is deep ruby red coloured with purplish highlights. It has a scent of red berry fruit, blackberry and morello cherry with strong spiced hints of sage, cinnamon and liquorice. The bouquet is completed with a marvellous nuance of vanilla and oak due to the expert use of woods, that is big barrels and barriques where it is aged for 26 months. In the mouth this wine has a big depth, it is mellow and the aftertaste confirms the olfactory hints. The thick and silky tannins give a unique sensation of persistence. It is bottled without filtering therefore it could have little residues on the bottom.
It goes well with game, all kind of roast meat, seasoned cheeses, but it can be appreciated also during a moment of peace and meditation. It must be served in the classical ‘ballon’ glasses and uncorked at least one hour earlier.

well structured, very clayey and without skeleton, well provided with organic substance with neutral pH.

Harvest

either by the middle or the end of October.

Winemaking

traditional fermentation on the skins with a maceration of 24 days followed by a malolactic fermentation at a controlled temperature. Aged in oak barrels for 26 months it is then bottled without filtering.
